I connected the top of the leg to the bottom of the leg with IK Handles, then shrunk the joint size to be able to see what I was doing better.
I grouped the toes into a new layer and hid them so that they wouldn't be accidentally selected.
I made an IK Handle from the leg to the top of the foot, and the top of the foot to the end of the toe.
I then parented the IK Handles to the foot control.
I parent constrained the hip control to the top of the leg.
I made an IK Handle from the top to the midpoint of the leg, the midpoint to the top of the foot, and the foot to the end of the toe.
I followed the instructor's Right Hind Helper to create a better joint.
When connecting the offset group to the Hind Helper Joints, the point rotation was out of place and I tried to fix it. The helper then did this and I couldn't get it to go back, as the undo button wouldn't fix it. I tried duplicating and moving the helper from the left leg to the right, but it wouldn't constrain to the main leg joint in the right way.
Update: Not sure if I got past the part that the helper joint was needed for, but the leg seems to move better with what was left of the last one.
